Cooking Tips: When mixing ingredients, just use gallon plastic zip bags to add the ingredients, then knead with your hands….you can add proteins to marinate…or mix cake or pancake mix or frosting! Ready-made piping bag and easy cleanup for other mixing jobs!

Ingredients

1 tablespoon sesame oil
1 pound boneless chicken breast tenders, diced
1 cup zucchini, ends removed and cut in half
2 cups red potatoes, washed and diced
2/3 cup diced yellow pepper
1 1/2 cups fresh mango Pico de Gallo or mango salsa, divided
1 cup asparagus cut in 2 pieces
1 cup diced green onions
1 tablespoon chopped cilantro
1/2 teaspoon kosher salt

Instructions

Place the sesame oil in 10 in skillet and add the chicken and halved zucchini. Stir and cook together about 7-8 minutes.
Add the potatoes, yellow peppers and 1 C of the mango salsa. Cook over medium-high heat, stirring until potatoes are tender.
Add the asparagus, green onions and cilantro to the skillet and continue cooking until the mixture is lightly browned. Lightly sprinkle with kosher salt.
Serve with any extra mango salsa on the side if desired.
