Sweet & Spicy Shrimp Noodle Bowls

Ingredients
- 1 pound large shrimp (31-40 size) peeled and deveined
- 2-3 broccoli crowns
- 1 box linguine, spaghetti or rice noodles, cook according to package directions
- 1/2 cup sweet & spicy Thai chili sauce
- 1 cup orange juice
- 1 cup orange juice
- 1/4 cup cilantro, chopped
- 1 lime cut in wedges
- Salt & pepper
- Cooking oil or spray, if desired
Instructions
- Heat a large pot of salted water to boiling. Keeping broccoli crowns whole, cook in boiling water 2-3 minutes until just tender. Remove with tongs and set aside.
- Return water to boiling and add pasta, cook according to box & drain well.
- Season shrimp with salt & pepper and cook 3-4 minutes in a large skillet over med- high heat. Skillet can be lightly oiled, if desired.
- Remove cooked shrimp from pan to a bowl and add Thai chili sauce, orange juice and soy sauce. Bring to a boil and simmer over medium until reduced and thickened, about 5 minutes.
- Cut broccoli crowns into bite size pieces, return shrimp, broccoli and cooked, drained pasta. Coat well in sauce, add chopped cilantro, stir and divide among bowls. Garnish with lime wedges.
